Bristol Old Fashioned N°2

Adapted from a recipe by Maxime Hoerth, Le Bar du Bristol, Paris, France

“This cocktail reminds me of my childhood.  Born in Alsace (north-east of France) I grew up with the X-mas flavours and I wanted to join those flavours to my favorite cocktail that is the old-fashioned (made with rum, gin, cognac, bourbon . . . ). This is how and why that cocktail was created.  X-mas flavours in a gentleman cold drink.” Maxime Hoerth.Bristol Old Fashioned N°2

15 ml (1/2 oz) Hot Wine shrub*

3 dashes Burlesque Bitters

50 ml (1.7 oz) Gosling’s Black Seal rum

1 cinnamon stick, as garnish

1 star anise, as garnish

1 orange twist, as garnish

Pour the shrub and the bitters into a chilled old-fashioned glass.  Add half of the rum and a few ice cubes and stir.  Add more ice and the second half of the rum.  Add the garnishes.

*Hot Wine Shrub

70 ml (2.4 oz) St-Emilion Bordeaux Wine

150 ml (5 oz) Grand Marnier Cordon Rouge

150ml (5 oz) Wild Strawberry Liqueur

3 cinnamon sticks

4 orange slices

4 cloves

3 star anis

Heat all ingredients and let reduce until half of it has evaporated.  Filter, add 185 ml (. 8 cup) caster (superfine)  sugar, and stir to dissolve.  Allow to cool and refrigerate.

gaz sez:  Jeez this was a bitch to put together, but it was well worth all the effort.  Maxime, who I know from my travels, has, indeed, put Christmas in a glass here, and here’s no need to wait for cold weather to drink it, either.

P.S.: Try the shrub in your coffee of a morning.  It’s pretty deeeelish!

World Class 2012: Stephon Scott, Trinidad

Here’s a glimpse of Stephon Scott, this year’s finalist from Trinidad & Tobago.  Stephon was a finalist in 2011, too, and this year he really stepped up his game–it was fabulous to see how far he’d come in such  short time.  Stephon is also great at not taking himself too seriously, and knowing when it’s the right time for a little fun.  Just look at his grin and you’ll understand!

These are Stephon’s recipes from the Classic Chic round:

Classic Chic – Clover Club

Glass: Coupette

Garnish: Raspberry

Method: Shake and strain

60ml Tanqueray No. TEN

22.5ml Lemon Juice

15ml Raspberry syrup

1 Egg White

1 barspoon Sugar syrup

 

Twisted Chic – Trini Lady

Glass: Coupette

Garnish: Nutmeg & cinnamon powder

Method: Shake and strain

45ml Ketel One

15ml Grand Marnier

30ml Lime Juice

15ml Sugar syrup.

101 Best New Cocktails, 2012: Cardamom and Orange Rye Flip by Adrian Orr, Boudoir, Glasgow, Scotland

Cardamom and Orange Rye Flip

Adapted from a recipe by Adrian Orr, Boudoir, Glasgow, Scotland.

10 cardamom pods

1 orange half

40 ml (1.33 oz) Michter’s Real rye whiskey

15 ml (.5 oz) Grand Marnier

20 ml (.66 oz) fresh lemon juice

15 ml (.5 oz) simple syrup

1 egg

Muddle the cardamom and orange in a mixing glass. Add ice and the remaining ingredients. Shake and double-strain into a chilled champagne coupette.

gaz sez: If you’ve tasted Regans’ Orange Bitters No. 6, you’ll know that I’m very fond of marrying oranges with cardamom, so this drink is a natural fit for this year’s 101 Best New Cocktails. Although Adrian doesn’t call for it, I recommend that you dry shake this to emulsify the egg thoroughly before adding ice to your mixing glass. Everything else about this potion comes together intuitively, and the ingredients indicate a good sense of taste on the part of Adrian Orr. Nicely put together, Adrian.

Luis Franco, Panama: World Class 2012

Here’s a glimpse of Luis Franco, Panama’s World Class finalist, in Rio this year.  Luis was wildly creative when he made drinks for Ueno-San and me, using balsamic vinegar and olive oil in a Jon Julio-based cocktail called Napolitan Dream.  And here are a couple more recipes that Luis used during the Classic-Chic round.

Classic Chic – Mai Tai

Glass: Rocks

Garnish: Pineapple and mint sprig

Method: Shake and strain

60ml Zacapa 23

15ml Grand Marnier

15ml Lime juice

30ml Sugar syrup

15ml Pineapple juice

7.5ml Grenadine

 

Twisted Chic – Eco-politan

Glass: Martini

Garnish: Raspberry

Method: Shake and strain

60ml Ketel One

15ml Grand Marnier

30ml Raspberry juice

7.5ml Lemon juice

15ml Sugar syrup
