Adapted from a recipe by Anthony Berg, Le Hussard, Nice, France.
“This drink was created for the 2012 Bacardi Legacy for the 150th anniversary of the brand. The mix of the Bacardi Superior and Bacardi 8 is intended to create a kind of “solera” in a cocktail. The pineapple brings some fruitiness, Martini gold gives his spicy side, and cherry bitters and orange blossom water leave a nice aftertaste. After tasting the mix shows some hints of cinnamon. 1 slice (1/2-inch) fresh Victoria pineapple
10 ml (.33 oz) maple syrup
10 ml (.33 oz) fresh lime juice
3o ml (1 oz) Bacardi Superior rum
10 ml (.33 oz) Bacardi 8 Años rum
20 ml (.66 oz) Martini Gold
1 dash Fee Brothers cherry bitters
1/2 barspoon orange blossom water
1 small mint sprig, as garnish
Muddle the pineapple, syrup, and lime juice in a mixing glass. Add ice and the remaining ingredients. Shake and double-strain in a chilled cocktail glass. Add the garnish.
gaz sez: Here’s another example of a refreshing summertime quaff that’s quite astounding in terms of complexity, and I think we have the cherry bitters—from the Dastardly Joe Fee!—and the orange flower water, to thank for that. Nice job, Anthony.
