Absinthe for Breakfast

James Gallagher, Cork and Kerry, Rockville Centre, NY

2 oz (60 ml) Double Chocolate Stout

.5 oz (15 ml) Lucid Absinthe Supérieure

.75 oz (22.5 ml) heavy cream

2 barspoons Eli Mason Gomme Syrup

2 dashes Regans’ Orange Bitters No. 6

2 dashes Bitter Truth’s Jerry Thomas Own Decanter Bitters

Pinch salt

1 egg yolk

Pinch ground cinnamon, as garnish

Shake all ingredients except egg yolk over ice. Discard ice, add egg yolk, and shake again. Strain into a chilled cocktail glass. Add the garnish.
