Ponzu Bonzo

Thomas Waugh, Major Food Group, New York, NY, and Karasu, Brooklyn, NY

“I was inspired by the savory quality of the sherry brandy. I built on the idea that I work at a Japanese bar right now and added ponzu flavors.”

2 oz (60 ml) Gran Duque D’Alba Brandy de Jerez

.25 oz (7.5 ml) Domaine de Canton ginger liqueur

.25 oz (7.5 ml) Pierre Ferrand Dry Curaçao

1 dash Dr. Adam Elmegirab’s Orinoco bitters

Soy sauce, as rinse

1 long slice ginger, as garnish

Stir over ice, and strain into an iced rocks glass with ice that has been rinsed with soy sauce. Add the garnish.
