Blue Cheese Incident

Thomas Waugh, Major Food Group, New York, NY, and Karasu, Brooklyn, NY

“Playing with the saltiness of the Highland Park with savory blue cheese.”

2 oz (60 ml) Highland Park 12-year-old Single Malt Scotch Whisky

1 oz (30 ml) Blue Cheese Cream*

1 oz (30 ml) Eli Mason Gomme Syrup

1 oz (30 ml) fresh lemon juice

1 egg white

5 drops orange flower water

Club soda, to top

Dry shake for 2 seconds, then add ice and shake for 30 seconds. Strain into a chilled fizz glass or highball glass. Let settle for one minute, then top with soda.

*Blue Cheese Cream: Mix 20 g blue cheese and 1 cup heavy cream, stirring until blended.
