30 ml (1 oz) Laird’s Bonded Applejack
30 ml (1 oz) Zacapa 23 Rum
22.5 ml (.75 oz) Averna Amaro
15 ml (.5 oz) fresh lemon juice
15 ml (.5 oz) cinnamon vanilla syrup*
1 barspoon apple butter**
1 dried mini rosebud, as garnish
Shake over ice and fine strain into chilled coupe. Add the garnish.
*Cinnamon Vanilla Syrup In a non-reactive saucepan, over a medium heat, add 1 cup water, 3 cinnamon sticks, and 1 cup demerara sugar. Stir until the sugar is dissolved. Split and scrape one vanilla bean and steep both the bean and seeds in the mixture for 10 minutes. Allow to cool, strain out the solids and bottle. Add a splash of Smith & Cross Navy Strength Rum to bottle to prolong the useful life of the syrup.
**Any fine organic store bought apple butter will suffice, but the end result tastes so much better if you make your own.
gaz sez: The applejack and Zacapa were made for each other, and the Averna performs the nuptials in this one. Then the syrup adds even more intensity to the drink, and the butter brings a rich, cream texture to the glass. Beautiful.
