Golden Prestige

Adapted from a recipe by Nicolas Michel, the bar at the Beau-Rivage Palace, Lausanne, Switzerland.Golden Prestige

“My cocktail was created for the Swiss Bacardi Legacy competition, and IT has been selected for the final.  Inspired by the legendary daiquiri, I wanted to create a cocktail [that was true to] the roots of Bacardi Superior.  A bit of history, a dash of nobility combined with an oriental touch.  The idea is to keep the exoticism of the liquid that Don Facundo has bottled 150 years ago and just add a hint of originality,” Nicolas Michel.

50ml (1.7 oz) of Bacardi Superior rum

15ml (.5 ml) fresh passion fruit juice

15ml (.5 ml) of Monin gomme syrup

10ml (.33 ml) of fresh lime juice

1 barspoon orange blossom water*

2 pinches of fresh saffron

1 orange twist, as an aromatic garnish

1 twisted orange zest, as garnish

Shake over ice and fine-strain into a chilled coupette.  Perfume the top of the cocktail with the orange twist, and discard.  Add the twisted orange zest to the rim of the glass.

*“I just want to let you know that I’m using in my recipe a soft orange blossom water aroma (the brand is Vahiné ) and just a bar spoon is enough to get the good balance.  So be careful if you use a pure orange blossom water which is going to be stronger… Use maybe the half of a barspoon,” Nicolas Michel

gaz sez:   The saffron almost disappears in this drink.  But it doesn’t disappear.  And that’s the magic in the Golden Prestige.  Well done, sir.
